Derek Brown is not only the creator of the award-winning Columbia Room in Washington, DC, his Drink Company was also behind the city’s most talked-about pop-up bars (themes included everything from “Game of Thrones” to Super Mario Bros. to cherry blossoms).
Brown, of course, is also a student of cocktail culture. “Learning about cocktails is a way of illuminating history,” he told Esquire in 2011.
And while he is happy to share the ways in which the cocktail has changed and transformed from 1BC to today’s “Platinum Age,” he’s also ready for its next chapter.
Brown develops zero-proof cocktails, too, and at Cookology, he’ll teach guests not only how to shake up Columbia Room’s famed cocktail, The Getaway, but also how to reimagine the drink as spirit free.
