Best Breakfast Sandwich: Breakfast Taco
“It dawned on me…that even though we opened at 8:30 in the morning, we didn’t have a real-deal breakfast taco on the menu,” chef-owner Victor Albisu recalls of the epiphany he had two years after opening his first Taco Bamba in Falls Church. “Now we do—and we offer it all day long.” Albisu’s doozy of a taco is filled with a mini-omelet rolled up with cheddar cheese, ancho-and-chipotle-spiced chorizo, guacamole, pico de gallo, crema and pickled onions. “The great thing about the taco business,” he says, “is [being able to offer so much variety] in something you eat in three or four bites.” Indeed. But we can do it in two or three.
