The Punta Umbria Gin and Tonic incorporates cherry-clove bitters and pays tribute to the Spanish beachside town where co-owner Javier Candon often summers. Also on tap is the Rio Tinto, named for the mining town where Candon was born. Made tableside, it features Catoctin Creek rye, house-made orange bitters and black cherries in a cinnamon-smoked glass.
