Flexibility is the name of the game at this Courthouse branch of the original Fire Works in Leesburg. Gluten-free crust? Check. Want half your pizza one way and the other half with different ingredients? Sure thing. Customize away, says culinary director Thomas Harvey, a onetime protégé of D.C. chefs such as Frank Ruta and Fabio Trabocchi. “Anything you want, we’ll make sure to accommodate it,” he says. A good recommendation, nevertheless, is the vegetarian Harvester with pesto, smoked mozzarella, red onions, mushrooms, artichokes and marinated tomatoes. The pesto gives it such depth that habitual carnivores won’t even miss the sausage or pepperoni. Meat and vegetables here are locally sourced, and the dough is made from a 23-year-old levain (similar to sourdough) starter.
